Cooking With Potatoes and Herbs

It’s that time of year again – summer time again and all that good weather makes you want to cook some roasted potatoes. And since we are talking about roasting potatoes this time of year, I’m sure you already know what a treat this is for your family and friends. Here are some wonderful ideas for this summer recipe!

My mom taught us that potatoes should be served warm so when you roast them, that’s the best way to do it. You could use dry herbs with your roast, but if you do have fresh on hand, just use them! Just remember to get the high heat method because as pretty much anyone who has ever cooked potatoes has found out, roasting them to get that crispy crisp outside layer on is one of the best ways to get that crispy inside layer on! Feel free to be more creative with the seasonings on those easy roasted potatoes, they go well with pretty much anything… Just try not to go overboard and make them too sweet or acidic (some people will actually be allergic to that) otherwise the potatoes won’t stay crisp and delicious on their own.

You could also wrap the roasted potatoes in aluminum foil and bake them until they are almost ready to flip. If you like you can also put them on the grill instead and toss them in with your barbecue sauce, or just on their own with a little olive oil, salt, and pepper. The nice thing about baking them is that even though they may not be incredibly crispy on their own, they are still pretty good as a side dish to other things. Roasted potatoes are also incredibly healthy, as long as you eat them in moderation.

A very simple yet delicious meal plan that almost anyone can follow is this: Start with a baked potato, add some vegetables, roast it for about 2 hours, and then serve it with some pasta or a tossed salad. That’s a two-course meal plan that everyone can handle. The nice thing about this is that you can add different vegetables at different times, depending on your guests’ tastes. Add some baby tomatoes to the potato while it’s baking, and some onions. Serve it with a sauce of your choice and enjoy a healthy, yet tasty meal.

Another great herb to add to roasted potatoes would be parsley. It adds that fresh, herb taste without being oily, and you can easily jazz it up with your choice of herbs and spices. One such spice to consider using is Worcestershire sauce, which can be purchased at any grocery store or spice store. A couple of tablespoons of this added to a medium sized roasted potatoes along with some butter and cheese makes a wonderful mild Italian soup that almost anyone will enjoy. Just be sure not to overdo it.

Other good options for herbs to include in your roasted potatoes recipe would be basil, cilantro, sage, or oregano. All are excellent choices, and are easy to find in the supermarket. If you don’t have any of these, just use dried thyme, which you can purchase from your local grocery store. Some other herbs that are ideal to throw into your recipe would be lemon basil, parsley, rosemary, and garlic. All of these herbs are excellent when you take advantage of their versatility.
