Crock Pot Tex Mex Chicken Stew


Sorry that there haven’t been a ton of new recipes coming out lately! Life has been crazy and hectic around here! The end of the school year is quickly approaching, there are a million and one projects that I’m wanting to do to our new (old) house. We are so extremely blessed, and the family has simply been enjoying a lot of our quick and simple go-to meals lately like easy baked chicken, our favorite grain free pizza, foil baked salmon and fried chicken bits .

This crock pot chicken stew was adapted from Martha Stewart and it is just perfect for those kinds of months days where there is minimal time for cooking. It is SO good that it is hard to believe that all you have to do is throw the stuff in a crock in the morning and when you’re ready to serve up dinner, simply shred the chicken with a fork and garnish with some sour cream, cilantro and tortilla chips. We were really impressed and will be adding this meal to our regular rotation as it is nourishing, inexpensive and most importantly- delicious! Yay for healthy convenience foods :)

Strawberries are so delicious! Not only are they one of the tastiest delicacies when fresh, they also pack a great nutritional punch. According to WHFoods:

“Many foods commonly consumed in the U.S. are valuable sources of antioxidants. But researchers have recently ranked the 50 best antioxidant sources among commonly eaten foods and found strawberries to be quite exceptional.”

Strawberries are an awesome source for antioxidants, but they are also an excellent source of calcium and flavonoids and a good source or folate, potassium and dietary fiber. 8 strawberries provide more vitamin C than an orange! (source)

Tomato Balsamic Soup


If you’ve been around This Chick Cooks for a while, you’ve probably heard of the Secret Recipe Club, . If not, its a group of a bunch of food bloggers who secretly get assigned a blog to choose a recipe from and then on a set date there is a reveal party where you can check out all the yummy creations and see who made a recipe from your blog.

Some months are more inspiring than others. There are usually at least a few recipes that sound pretty good to make from any given blog, but this month Elizabeth from Food Ramblings really knocked my socks off! I wanted to make SO many things from her blog. But here are just a few of her yummy creations: coconut peanut butter no bakes, peanut butter banana muffins, risotto in a lemon cup

In the end I settled on her tomato balsamic soup that she got from It’s Good to Be the Cook. Locally grown tomatoes (grown in a green house) are starting to come into season already! This soup sounded just perfect as it is a minimal work maximal flavor combo. Just dump a bunch of ingredients in a pan and cook it in the oven. Then while its cooking you can go about other business and all you need to do to finish up is blend the soup and top it with some grated cheese and even a sprinkling of balsamic vinegar. An immersion blender is awesome for this kind of thing. For 30+ years I lived without an immersion blender and now that I finally got one I LOVE it. Makes blended soups so easy and I don’t have to cringe from putting hot soup in a plastic blender :)
