No Bake Chocolate Peanut Butter Fudge

Do you ever have that feeling where life is just too hectic and there just isn’t enough time to make a wholesome homemade treat to enjoy? No bake chocolate peanut butter fudge is the perfect answer to that dilemma.This week we moved from Kentucky to Texas and it was just today that I started to make some serious progress with getting some semblance of organization in the kitchen. Needless to say, I’ve been a busy lady. Well, my point in telling you this is that this fudge is that easy to make, for times when life is crazy busy. It takes just a couple minutes to mix together and then stick into the freezer.

It is so delicious that you’ll be shocked to find that each cup only has about 3 grams of sugar! With the added coconut oil (chock full of healthy stuff!) and such a minimal amount of sugar it makes for a treat that is sure to be a hit at any meal. These would be just perfect to pack in the lunchbox for a nutritious treat!

No Bake Chocolate Peanut Butter Fudge

No Bake Chocolate Peanut Butter Fudge

Ingredients

  • 1 cup nut butter of your choice (I used peanut butter)
  • 1 cup coconut oil
  • 1/2 cup carob powder or unsweetened cocoa powder
  • 3 tablespoons honey
  • 3 teaspoons vanilla extract (easy DIY extract)
  • Sea salt to sprinkle on top

Instructions

  1. If it is above 76 degrees your coconut oil will already be liquid, otherwise melt the coconut oil, mix all ingredients and stir until thoroughly combined and drop by tablespoonful into mini muffin liners. Chill in freezer an hour before serving. You can also line a bread pan with parchment paper and pour the mixture into the lined pan. You'll want to chill it for a few hours or until firm.
  2. Keep these cups cool in the fridge or freezer until ready to serve.
