I don’t know about you, but around here ice cream is good any time of the year, cold or hot. This ice cream is kind of a surprise. It is so creamy, soft and smooth…. pure deliciousness.
The surprise comes in the fact that it is simply frozen banana, peanut butter and just a teeny bit of milk blended together in the food processor until smooth. This stuff is amazing and totally tastes like a treat. Eat it plain or top it with a bit of (healthy!) dark chocolate for an extra special, guilt-free treat.
Ingredients
- 2 bananas, sliced and frozen
- 3-4 tablespoons peanut butter
- 1/2 tablespoon milk (or coconut milk for a dairy free option)
Instructions
- Combine bananas and peanut butter in a food processor and blend on high for 2-3 minutes, stopping occasionally to scrape down the sides.
- When mixture resembles a very coarse, crumbly texture, add milk and continue to process on high for another minute or until a smooth texture has been achieved.
- Serve immediately or freeze for up to half hour before serving.

We can’t resist a sweet treat at Christmas and while these cranberries are dipped in chocolate, our guilt is alleviated by the fact they’re also fruit! The festive snack can be eaten straight from the pack or sprinkled on desserts such as ice cream.
