Peanut Butter Ice Cream {from the food processor}

I don’t know about you, but around here ice cream is good any time of the year, cold or hot. This ice cream is kind of a surprise. It is so creamy, soft and smooth…. pure deliciousness.

The surprise comes in the fact that it is simply frozen banana, peanut butter and just a teeny bit of milk blended together in the food processor until smooth. This stuff is amazing and totally tastes like a treat. Eat it plain or top it with a bit of (healthy!) dark chocolate for an extra special, guilt-free treat.

Ingredients

  • 2 bananas, sliced and frozen
  • 3-4 tablespoons peanut butter
  • 1/2 tablespoon milk (or coconut milk for a dairy free option)

Instructions

  1. Combine bananas and peanut butter in a food processor and blend on high for 2-3 minutes, stopping occasionally to scrape down the sides.
  2. When mixture resembles a very coarse, crumbly texture, add milk and continue to process on high for another minute or until a smooth texture has been achieved.
  3. Serve immediately or freeze for up to half hour before serving.
