These rich little balls remind me of dark chocolate, as they are a delicious chocolatey taste without being overly sweet. They are a mix and eat snack of nut butter of your choice, shredded coconut, coconut oil and cocoa or carob powder with just a touch of raw honey. They’re a great portable snack with just about 1 gram of added sugar per ball, in the form of raw honey. The original recipe for these protein balls came from Rachel’s Wellness. Many thanks to Rachel for the great inspiration!
Ingredients
- 1 cup shredded coconut
- 10 tablespoons cocoa or carob powder
- 6 tablespoons nut butter of your choice (almond and peanut both work very well)
- 2 tablespoons coconut oil
- 1 teaspoon vanilla extract (You can make your own with just 2 ingredients and a jar!)
- 1/8 teaspoon salt
- 2 tablespoons raw honey
Instructions
- Combine all ingredients in a bowl and mix well. Towards the end of mixing you'll probably want to use your hands to knead the ingredients together. The mixture will seem a bit dry, but once you knead well, it will moisten up a bit.
- If the mixture remains too dry after kneading, add more nut butter one tablespoonful at a time until the mixture is moist enough to be rolled into a ball shape.
- Roll mixture into 1-2T sized balls and eat immediately or refrigerate before serving, if desired.

How much honey do you need to sweeten them?
2 tablespoons is what we used. If you prefer a sweeter chocolate, you may want to use a bit more.
