Have you ever visited Pinterest? You’ll find all sorts of fabulous recipes (and other things) to make you drool. I recently came across some raw cookie dough balls that looked absolutely heavenly, but were full of refined sugar.
This is my take on raw cookie dough balls that are made with wholesome,natural ingredients. These are so easy and quick to make. To make your own raw cookie dough balls, mix up nut butter, a bit of natural sweetener, chocolate and coconut (or oats if you’re not a fan of coconut). Since these chocolate joy balls contain only a teeny bit of added sweetener, you can feel good about tossing one in the lunchbox for a practically guilt-free treat.
Ingredients
- 1/2 cup almond butter (any natural nut butter should work)
- 1/4 cup shredded coconut (or substitute quick oats if you don't like coconut)
- 1/4 cup chopped dark chocolate (preferably free of soy lecithin as it is a hormone disruptor)
- 1/4 teaspoon cinnamon
- 1-2 tablespoons rapadura or sucanat (or other granulated sweetener)
- extra coconut, chocolate bits, or cocoa powder for coating balls
Instructions
- Mix all ingredients in a bowl and stir until very well mixed. Form into balls using a tablespoonful of dough at a time.
- Roll each ball in coconut,chocolate bits or cocoa to coat.
- Place the balls on a cookie sheet and freeze for 1/2hr or more and serve cold. Store extras in freezer.











How simple. What a perfect little treat and portion controlled! Can you keep them them in the fridge?
That should be fine. They might just be a little bit softer.
