There is something to be said for one pot meals, and that something equals awesome and less dishes to wash :) This sausage skillet dinner falls into both categories. It is colorful for the eyes and the palate. The combination of sweet peppers, onions, sausage, butter and just the right spices make this a complete winner you can get onto the table fairly quickly. I bet you’ll be adding it to your regular rotation.

Ingredients
- 1 1/2-2 cups finely chopped broccoli (small, bite sized pieces)
- 1 pound sweet italian sausage (or 1 lb pork plus Italian sausage seasonings minus the vinegar)
- 1 onion, diced
- 1 red pepper, diced
- 6 eggs, beaten (read more about why to use pastured eggs
- 1/2 teaspoon dried basil or 1/2 tablespoon fresh how to plan your garden and grow your own
- 2-3 tablespoons butter
Instructions
- Heat butter in a large skillet and saute onions over medium heat for about 5 minutes. Add the sausage and cook until the meat is only slightly pink. Add veggies, cover and cook about 3 more minutes, stirring once or twice.
- Stir in basil (spices if you're using pork) and eggs. Cover, stirring every few minutes, until cooked through.
- Top garnished with a bit of freshly shredded parmesan cheese (if desired). We didn't and it was fantastic.
