Have you ever visited Chocolate Covered Katie? She shares all kinds of treats every day and there is always something there to catch your eye. When I saw her coconut crack bars I knew I’d have to make them since they are made in a matter of minutes, no cooking involved. They are so good! And then I came across a recipe for Coconut Snowballs from The Kitchn. This recipe is a combo of the two for the best of both worlds.
Coconut crack is one of those why didn’t I think of that recipes so simple and easy like 2 ingredient chocolate magic shell, refrigerator oatmeal and my favorite peanut butter banana smoothie- good enough for an ice cream store . These little balls of coconut goodness are a simple mix of coconut, coconut oil, cinnamon and a few other things. They are definitely going to be making an appearance in the lunchbox as a simple, somewhat healthy, portable treat. Dip them in chocolate and add an almond and it would be a homemade almond joy… yum!
Ingredients
- 1 1/2 cups shredded coconut, unsweetened
- 1/4 cup honey or pure maple syrup
- 1 tbsp virgin coconut oil
- 2 tablespoons yogurt or coconut milk
- 1/2 teaspoon cinnamon
- 1/2 tsp pure vanilla extractmake your own
- dash of salt (real salt is my favorite)
- a few extra tablespoons coconut for rolling
Instructions
- Combine all ingredients in a food processor and process just until well mixed and the mixture sticks together. Form into balls and roll in coconut if desired. Chill in freezer for at least an hour. Serve cold.











Love that you use unsweetened coconut. I was looking for a substitute for my favorite coconut cookies. Saw these on Food Friday.

These do look good. Am I the only person who has a hard time finding unsweetened coconut. I can only find the sweetened kind at the stores. Maybe I am not looking in the right area.
You definitely aren’t, Jenna. You can get it from a health food store or order from amazon. I use this one.
These are amazing….have to double or triple the recipe because we just cant get enough. My kids are on GAPS so they cant have them because of the maple syrup so Im about to try them with honey to see if they’re still good. Will let you know :)

I have a friend who makes something similar, but also adds hemp hearts for nutrition value. Also, sometimes instead of vanilla, she uses lime juice and lime zest so they’re little balls of coconut lime deliciousness!
these were fabulous….super sweet, so one ball goes a long way. I wonder how they would taste with a little lemon zest?

You can definitely use sweetened coconut. It will simply yield a sweeter finished product.

These look great, I LOVE anything coconut. I haven’t tried coconut oil yet, but this recipe might push me in that direction.
The term “Crack” in anything food related is so incredibly insensitive.
