Did you know that you can make homemade hot sauce and it is as simple as turning on your blender? Alright, there are a few more steps than that, but it is SUPER simple and only takes a matter of minutes to turn that bounty of fresh peppers into a delicious hot sauce. Use whatever variety of pepper you like. Obviously the hotter peppers will yield a hot sauce with more kick and vice versa. And, you can easily combine different types for a unique flavor blend.
To make the hot sauce simply cut the tops off of the peppers, put them in the blender and pour in enough white vinegar to cover the peppers. Turn on the blender and process until the mixture is fairly smooth. Now toss a palmful of salt and pour the mixture into a pan. Bring to a boil, covered, stirring once or twice.
Next, simply pour the mixture into a jar, cover with a dish towel and allow to set at room temperature for 3 days. When the 3 days are up the mixture will have a layer of vinegar on top. I usually skim off all but a thin layer of the vinegar and either reserve it for other recipes or pitch it. Then, simply cap the jar and put in the fridge. That’s it. You’ve got homemade hot sauce that will last for months in the fridge. Give it to friends and they’re sure to be impressed and will have to no idea that is was so very easy to make :)

- any variety of peppers, washed
- white vinegar
- salt

- Pour the pepper mixture into a glass jar and cover with a dish towel. Leave at room temperature for 3 days. After 3 days, skim off all but a thin layer of the vinegar. Put a lid on the jar and store your homemade hot sauce in the fridge.

Love hot sauce and this is very do-able. Can you tell me approximately how much a handful of salt might be?
For almost a whole blender full of peppers I’d say that I used about a tablespoon or so. The recipe is very forgiving and it is actually hard to go wrong :) Hope that helps, Debora!
I am wondering if you have one that I can process like a jam or jelly? Id there away to keep it so it dosne’t have to be put in the fridge?

Other canned hot sauce recipes I’ve seen usually include tomatoes, which provide another source of acid, important to the safety of the canned product if using a boiling water method. The question with this recipe would be whether there is enough vinegar included to safely water bath can it — peppers on their own must be canned in a pressure canner to be safe.
