Skillet fried bacon, wilted greens (such as kale, spinach or chard), tomatoes, egg and fresh basil create this winning egg dish.
Frittatas are such a versatile food that can be served for breakfast, lunch or dinner and could even be cut into bite sized squares for an appetizer.
With so much basil and a gorgeous array of beautiful, heirloom tomatoes in season, why not give it a shot? We love trying to eat as many eggs as possible since they are so cheap and eggs are a inexpensive, nutritional powerhouse!
Ingredients
- 4 slices of bacon
- 1 cup of greens of your choice (kale, spinach, chard etc...)
- 1 sliced tomato
- 4 eggs
- 2 teaspoons milk
- 1/2 teaspoon real salt
- 1/4 teaspoon pepper
- 1 tablespoon fresh basil or 1 teaspoon dried basil
- additional basil for garnish if desired
Instructions
- Preheat broiler.
- Cut bacon into small bits and brown over medium-high heat for 10 minutes, or until crisp. Drain fat.
- Reduce heat, add greens and cook for a few minutes, until wilted.
- Add egg, milk, salt, pepper and basil and continue cooking over medium. Place tomatoes on top. Occasionally lift edges to allow uncooked egg to run under. Cook until only the center is runny.
- Broil for 6-8 minutes or until egg is cooked through.

Looks good! I’m trying this today. I didn’t have time to make eggs for breakfast so I thought I would make some for lunch, plus I have lots of fresh tomatoes and basil from the garden.
