Roasted Tomato Sauce

This simple, roasted tomato sauce can be prepared using either cherry or grape tomatoes.  The tomatoes are roasted with olive oil and onion, then blended with fresh garden herbs, garlic and olive oil. Remember the post I wrote about how to plan your garden with all the great ideas for square foot gardens and how to plan ahead so you don’t end up with 2,000 pounds of radishes you don’t even like (like my year of the radish last year)?  

Well, we can officially call this year the year of the grape tomatoes. We had a nice plan for our garden this year, but the problem was that when the tomato seeds were planted nobody labeled which variety each tomato plant was. We ended up with 7 grape tomato plants and one fuzzy peach tomato plant. Needless to say, we’ve been enjoying grape tomatoes, a LOT of grape tomatoes. Even if you don’t have grape tomatoes coming out of the garden in abundance, this roasted tomato sauce is so tasty for pizza, pasta or atop a bed of summer veggies.

Cherry Tomato Sauce

about 1 1/2- 1 3/4 cups sauce

Cherry Tomato Sauce


  • 4 cups of cherry or grape tomatoes
  • 2 tablespoons of olive oil, plus more for drizzling
  • 1/4 cup fresh herbs (basil, oregano and parsley work well)
  • 1 onion
  • 1/2 teaspoon garlic powder
  • salt and pepper to taste


  1. Preheat oven to 425 degrees.
  2. Chop onion into small pieces. Spread tomatoes and onions in a pan and drizzle with olive oil.
  3. Bake for about 30 minutes or until tomatoes are tender and wrinkly.
  4. Cool for 5 minutes and then process tomatoes in a food processor or blender with oil, garlic powder and herbs. Add salt and pepper to taste and serve.
