This simple, roasted tomato sauce can be prepared using either cherry or grape tomatoes. The tomatoes are roasted with olive oil and onion, then blended with fresh garden herbs, garlic and olive oil. Well, we can officially call this year the year of the grape tomatoes. We had a nice plan for our garden this year, but the problem was that when the tomato seeds were planted nobody labeled which variety each tomato plant was. We ended up with 7 grape tomato plants and one fuzzy peach tomato plant. Needless to say, we’ve been enjoying grape tomatoes, a LOT of grape tomatoes. Even if you don’t have grape tomatoes coming out of the garden in abundance, this roasted tomato sauce is so tasty for pizza, pasta or atop a bed of summer veggies.
