Don’t you just love fresh, seasonal food? It is the BEST! When I recently came across the Improv Challenge on Frugal Antics of a Harried Homemaker, I knew I had to participate. Each month they pick a ingredient that is in season and everyone makes a recipe using that ingredient (or combination of ingredients). This month the challenge was to use almonds and cherries. Yummy! I decided homemade cherry pie larabar would be perfect!
It only takes a few minutes to make them and there is no oven/stove required so it is just just right for this hot weather!
How to Make Cherry Almond Larabar
All you’ll need is dates, dried cherries and almonds. You might want to make sure you’ve got enough before you get started. I got out my crispy almonds and started making the bars and ended up having to individually pick out almonds from the pack of mixed nuts we had to get enough for the recipe. :)
Next, blend the dates and cherries until they are little pieces.
Add the nuts and blend until it is a crumbly mixture.
The best way to shape the bars (in my opinion) is to line a container with saran wrap and then firmly press the fruit and nut mixture into the pan. You can do one big pan and then cut it into bars or you could just use a personal sized container and make 1 bar at a time.
When you’re done shaping, carefully lift out the plastic and you’re all done!
Just store them in the fridge and you’ve got homemade treats all ready to go!
Ingredients
- 1 cup almonds
- heaping 1/2 cup dried dates, pitted
- heaping 1/2 cup dried cherries, pitted

- Add dates and cherries to food processor and process for a few minutes, until the fruit is in small pieces.
- Add nuts and process until the mixture forms a crumbly consistency.

Ironically, I just finished a real cherry Larabar just before I sat down to read the Improv entries. Winn Dixie was clearing them out, so I couldn’t resist buying a couple. As I sat there looking at the bar, I was contemplating how to make them….and voila, you answered my question. I am totally going to try these.

I don’t think fresh cherries would work. I used a store brand of fresh cherries that did unfortunately have added sugar. We rarely eat these as a treat so I figure that the added sugar every now and then won’t kill us :)

Thanks for the recipe! I found I needed less almonds, but maybe my dates were a tad dry? I just added a couple more dates! I also used dried cranberries as that’s what I had in the pantry! Really a great template for many different flavor experimentations. Half the price, too! :) Thanks!
