Beets and Berries Smoothie {so delicious!!!}

I am embarrassed to admit but I *think* that this is the very first year I’ve had fresh beets that aren’t from a can. I couldn’t resist getting a bunch from the farmer’s market last weekend. Previously, I never really thought much about beets, but I am in love. They are absolutely delicious roasted with olive oil, and this beet and berry smoothie has such a wonderful flavor and the color is just too pretty. The flavor of the strawberry beet smoothie was just right to me- slightly sweet without being overly sugary. If you have not tried beets then you must go and get some promptly and try this smoothie and also try roasting them. I bet you’ll be coming back for seconds :)

Beets and Berries Smoothie {so delicious!!!}

Ingredients

  • 1/4 cup grated, raw beet (about 1 small beet, washed and peeled)
  • heaping 1/3 cup frozen strawberries
  • 1/2 cup milk
  • 3 ice cubes
  • honey to taste (optional)

Instructions

  1. Combine all ingredients in blender and blend until smooth.

    What a great idea. I have to admit, I’ve had a hard time learning to appreciate beets. I had so many from my CSA a few years back & tried them every which way. My husband finally told me to stop bringing them home, but I really do want to keep giving them a try. This smoothie looks perfect & you’re right about the color – beautiful! maybe I can even fool him! ;)

    • Well, maybe he’ll enjoy it mixed with the strawberries and especially if you add a bit of honey. I guess each person has unique tastes, but I found the beets roasted in olive oil to have a rather sweet flavor and my 7 year old really liked them as well. But, there are certain veggies we are not huge fans of as well so I can understand where you’re coming from on this, Kim. Hope you have a good one.

    This looks great! I am going to have to try this. The only way I like to eat beets so far, is pickled. And it’s pink, my favorite color!

  • I put beets in our smoothies too my boys ilke a “red or purple” smoothie but with beets I can add anything under the sun and it is “still” the right color.. I just LOVE your site
