Guacamole is so delicious and always a pleasure to enjoy when we’re out, but I had never thought to make it at home. Don’t put off trying it at home if you’ve never prepared guacamole before. This easy guacamole recipe is a cinch to make- from the time you start prepping until you’re ready to dig in is just a matter of minutes. This dip would be perfect with some fresh veggies or corn tortilla chips.
What could be easier than mashing up some avocado and stirring in some juicy fresh tomatoes, cilantro and onion and finishing off with a splash of fresh lime juice? Yes, please. This sounds like summer days with a barbecue and a margarita on the deck. We have been having unseasonably warm weather out this way. Is it abnormally warm in your neck of the woods?
Ingredients
- 2 avocados
- 1 small onion, finely chopped
- 1 ripe tomato, diced
- 1 fresh lime, juiced (or about 1-2 tablespoons lime juice)
- 1 clove of garlic, finely chopped
- 1-2 Tablespoons fresh cilantro
- salt and pepper as desired
Instructions
- Mash avocado with a fork until it reaches a thick, pasty texture with chunks. Stir in remaining ingredients and serve.
- If you want to prepare the dip ahead of time, set the tomatoes aside and stir in just before serving.

Hi! I noticed that we both posted guacamole recipes this week over at Food Forager’s Fat Tuesday! Looks like great minds think alike! We have very similar recipes. I could eat guacamole everyday and never tire of it. :)

I love guacamole and make it often. I make it similar but leave out the onions and tomatoes and it is still good. So if someone didn’t have it all on hand or wanted to cut a few steps they could make it that way as well.
Thanks for sharing that suzy. I know that there are some people who don’t do well with onions or tomatoes also so that may be a nice option for them as well.
It’s most definitely NOT warm here…snowing this evening…a very wet, yucky snow, not the pretty white stuff! At least this means our mountain cabin getaway will also include snow for Spring Break! But guacomole is good in any weather! (; thanks for sharing katie..
