Ground Beef With Peas and Carrots

Ground beef with peas and carrots sounds so simple, but the flavor of this dish is amazing. It is truly delicious, has a 5 minute prep time and can be on the table within 3o  minutes. That’s pretty much perfection in my book :)

This one is an all around winner with the whole family. I first found the recipe on Eat Nourishing, a website featuring user submitted recipes that are made with real foods. The recipe was originally submitted by Molly of Organic Spark.

I know it’s not corned beef, but I think that this would make a delicious dinner for Saint Patrick’s Day paired with some whole wheat guinness bread.

¼ cup butter
1 cup diced onion
1 cup diced carrots1 cup frozen green peas ( or use 2 cups of a frozen peas and carrots mix)
2 tsp chopped fresh thyme or rosemary or 1/2 teaspoon dried
1 lb grass-fed ground beef
1 tsp dried mustard
two dashes cayenne
1 tsp apple cider vinegar
1¼ tsp real salt
½ tsp ground pepper
1 cup beef or chicken stockHeat a skillet over medium high and melt butter. Add the onions and sauté for about 5 minutes.

Add the beef and the rosemary or thyme and continue to sauté for another 5 minutes.

Stir in the remaining ingredients , bring to a simmer and continue to simmer, uncovered, for about 10 minutes.
