I have tried a LOT of soup recipes because I’m always looking for ways to get my family to consume more homemade broth. It is so nourishing!
An ancient proverb says that good broth can resurrect the dead. I don’t know about that, but it certainly is tasty!
This Italian bean soup is absolutely delicious and tastes just as great as a leftover. I don’t recall where I got the recipe, but it has been a staple in our family’s winter meal rotation for years. That is saying something because I only keep the best recipes in my recipe box.
Everyone in the family loves it and that is quite an accomplishment around here!
It takes 30 minutes or less and is such an easy recipe. If you’re pressed for time around dinner, you can whip your soup up a little earlier in the day and then leave it in the slow cooker to simmer for a few hours.
It would be just wonderful with a big piece of crusty homemade sourdough. (I’m sharing a tutorial to make your own whole wheat sourdough starter really soon)
| ITALIAN BEAN SOUP RECIPE serves 4-6 people 1 pound of sweet italian sausage 1 medium onion diced garlic to taste (1-2 cloves is plenty) 1 2/3 cup cooked great Northern beans (this equals 1 can, but I try to avoid canned products due to cancer causing BPA) 1 2/3 cup black beans (or 1 can) 1 2/3 cups of diced tomatoes and their juices (or 1 can) 3-4 cups of broth 1 teaspoon dried basil Cook sausage and onion until the sausage is cooked through. Add remaining ingredients and simmer for at least 30 minutes. Or, place in crockpot on low for a few hours. |

I make a similar soup, but with smoked turkey sausage. It gives amazing flavor, but it's pretty healthy.
