When I think of sweet potato dishes, pureed sweet potato topped with a brown sugar mixture is the classic recipe that comes to my mind. I don’t think that a Thanksgiving has gone by where you wouldn’t find us 6 kids crowded around the Thanksgiving table to have some of those candy sweet potatoes.
I don’t know if it is the dish or the nostalgia of that recipe that I love more.
These baked sweet potato rounds are really simple and only involve a few minutes of prep work. All you have to do is peel the sweet potato, slice it into 1/4 inch thick rounds, baste with butter and olive oil and sprinkle lightly with salt. You can easily scale the recipe to feed a small family or a crowd. The flavor is so very good and the whole family loves them! They are definitely one of the classics that we have over and over and you can feel good about serving up.
| HEALTHY BAKED SWEET POTATO ROUNDS from Nourishing Traditions 3-4 sweet potatoes Preheat oven to 350. Peel sweet potatoes and and slice into 1/4″ think rounds. Mix the butter and oil and baste the cookie tray. Spread the potatoes in a single layer on the tray and baste the tops with the butter mixture. Sprinkle lightly with salt and bake for about 45 minutes. |
