How can it be the Christmas season without having some fudge? But, this fudge is not your typical white sugar laden concoction that sends you into a sugar induced coma followed by a sugar crash. Chocolate honey butter fudge boasts of butter and raw honey.(Yes, butter is healthy! Read about why butter is healthy. It is full of all sorts of stuff that is really good for you!)
You don’t have to do any cooking to whip up some of this no bake fudge, so not only is it quick, you also get all the great benefits that come from eating raw honey and butter. It would be perfect for a party or a gift. It seems like a lot of the fudge I’ve tried can be almost sickeningly sweet, but this recipe had just the right ratio of chocolate and sweetness. It is really decadent, so a little goes a long way. Not in the mood for fudge? How about homemade reese cups.
PS- The winner of the giveaway is from comment #17, Sherry Grennille! Thanks so much to everyone who came by to celebrate the first anniversary!

1 1/2 cups butter, preferably raw grassfed or cultured, softened
1/2 cup cocoa powder
1/3 to 1/2 cup of raw honey
1 Tbsp. vanilla
pinch of sea salt
Grease and line an 8×8 inch pan with parchment paper. In a bowl whip together ingredients until well whipped. Spread fudge into pan and place in freezer to set. Keep refrigerated and serve cut into small pieces.
PS- Try this using 1/2 cup peanut butter to substitute for the butter. Yum! You may also want to try using it as a frosting.

I can't wait to try this! I always make fudge at Christmas too. If this is a bit healthier than others does that mean I will be able to taste-test even more than usual?Best wishes,Natasha.
Oh wow this sounds wonderful. I'll definitely have to give this a try!
What a fun and easy recipe. I think I've seen one similar done with coconut oil. Do you think that would work if I didn't want to use butter?
France-I honestly don't know if it would work or not! If I were you'd I'd scale down the recipe to a very small quantity to try it out. Please, let me know how it turns out if you try it!

Looks wonderful…wonder if it would work with coconut butter? I'll have to give it a try…
sounds yummy!! where do you find raw honey? is it the same as the honey I buy at the grocery? Thanks for your help finding raw honey.
I wonder if you can use carob powder instead of cocoa powder?
I'm not sure if you could use carob powder. If you try it, let me know how it turns out!
Looks delish! We'd love for you to share your recipes with us at Simply Delish Saturday
OK, I made this recipe tonight and here's what I did: 3 sticks pasture butter1 tablespoon coconut oil1/4 cup cocoa powder1/4 cup carob powder1/2 cup raw honey1 Tbsp vanillapinch of celtic sea saltmy butter was rock hard out of the fridge so i microwaved it to almost melted. i mixed in all other ingredients and used the hand mixer to mix it completely. we tasted the "batter" and it seriously tasted like chocolate frosting. YUM! I greased an 8 inch round casserole dish with coconut oil and poured the batter in. It's in the freezer now, we can't wait to taste it when it's solid!
I made this fudge a few weeks ago using 1 cup butter and 1/2 cup virgin coconut oil. My family loved it! My husband mentioned that it tasted like frosting. I made homemade donuts for his birthday last week and used the fudge at room temperature to frost the donuts. A big hit! I'm sure the fudge could be used to frost a cake too, may try that for my baby's first birthday in February. I'll let you know how it goes!
Yum! My daughter is home sick today, so I think I know what we’ll do this afternoon! Thanks for sharing. Here is my favorite “healthy” peanut butter and chocolate treat – it is delicious! http://behealthybehappywellness.com/2012/10/how-to-make-a-healthier-peanut-butter-chocolate-treat/
I love that you use grass fed butter. I was just thinking of how I could make a fudge with it.
Thanks, Katy. I’m always looking to incorporate more butter for my family :)

I would love to try this recipe, but I would like to try it without the cocoa powder – how do I change the recipe for just plain honey fudge
thanks so much – looking forward to your reply
You could use carob powder in place of the cocoa.
