Now that its hot outside I’m always on the lookout for tasty treats that don’t involve heating up the kitchen. When I saw these cute little watermelons in a magazine I knew I had to make some.Little limes get hollowed out and then filled with pink sherbet of your choice and topped off with chocolate chips to look like a watermelon. What a fun way to serve sherbet! I think that adding the seeds is actually to humor us adults since kids now hardly even realize that “natural” watermelons have seeds. It is funny how things change :) These are great to make ahead of time and stick in the freezer to pull out when you’re ready to use them. Mini Watermelons Recipe
pink sherbet (strawberry, raspberry etc..)
mini chocolate chips (or regular chips chopped up to be smaller)
Cut a tiny bit off the bottom of the lime, just enough so it will stand up. Cut off the top and scoop the insides out. I went around the edges with a knife and then used a spoon to scoop out the lime. Now fill the limes with sherbet and top with mini chocolate chips. Enjoy!
