First off I have to warn you that there are going to be some more amazing chocolate recipes coming your way. I just recently found a book called “Chocolate” filled with over a hundred wonderful chocolate recipes that I can’t wait to share with you. The first one that I decided to try was a double chocolate muffin recipe that has both cocoa and white chocolate- with a little cinnamon sprinkled in for good measure. Let me tell you, these muffins are fantastic! The photos don’t do them justice. The flavor of the 2 different types of chocolate mixed with a hint of cinnamon is out of this world. I wonder why the recipe is called muffin when it clearly looks like (and has the makings of) a cupcake? Maybe the author was just wanting to justify having one of these as a midday snack. Nothing wrong with that :) I made a batch as mini muffins and just one perfectly satisfied my chocolate cravings. Plus, each muffin is less than 100 calories. How can you beat that?
Double Chocolate Muffins
3/4 cup all purpose flour
3 tablespoons cocoa powder
1/2 tablespoon baking powder
1/2 teaspoon cinnamon
1/4 cup sugar
1/4 cup white chocolate chips (or diced white chocolate)
1 egg
2 tablespoons plus 2 teaspoons canola oil
1/2 cup milk
Topping:
1/4 cup white chocolate chips
1 teaspoon canola oil
Preheat the oven to 400. Line mini muffin pan with paper liners. Sift flour, cocoa, baking powder and cinnamon into a bowl. Stir in the sugar. In a separate bowl whisk together the egg and oil until frothy looking. Gently stir in the milk.
Pour the egg mixture into the milk mixture and stir just until combined. Drop 1 tablespoon of batter into each muffin cup. Bake at 400 for 7-10 minutes (or until a toothpick inserted into the center of a muffin comes out clean)
Cool the muffins on a wire rack. Once cooled, melt the chocolate chips and oil in a microwave safe bowl. Microwave in 15 second intervals, stirring after each cooking session. Once the chocolate is melted, spoon it over the tops of the muffins and sprinkle the tops with cocoa if desired.
Yields: 18 mini muffins

Rachel-You can definitely use a regular muffin pan. It will make 6 muffins in a regular pan and then you will probably want to cook them about 15-20 minutes or until a toothpick inserted comes out clean. If you want to you can easily double the recipe to make 12 regular muffins :)
