Farmer’s Casserole

We really love having breakfast for supper. This Farmer’s Casserole is perfect for that- hash browns, meat, cheese and eggs. It is such a hearty dish and oh so yummy. It is really easy to throw together, and you can quickly scale it up to feed a bunch of people.  Use pretty much any meat the you think tastes good with eggs- ham, Canadian bacon, sausage, little smokies, or steak- and the list could go on and on. Make it ahead of time and bake it when needed or make it when you are ready to cook. We’ve had this in our regular rotation for years now and I bet you’ll add it to yours too.

Farmer’s Casserole Recipe
3 cups frozen hash browns
3/4 cup cheese (Monterrey Jack, cheddar or Monterrey Jack with jalapenos)
1 cup meat (Canadian bacon, sausage, ham, little smokies or whatever sounds good)
1/4 cup sliced green onions
4 eggs
1 1/2 cups milk
1/8 teaspoon salt
1/8 teaspoon pepper
Preheat oven to 350. Spray a 2 quart dish wish cooking spray. Arrange potatoes in baking dish and sprinkle with meat, cheese and green onions. In a bowl mix eggs, milk, salt and pepper. Pour the milk mixture over the potatoes. Bake uncovered for about 40-45 minutes, or until a knife inserted in the center comes out clean. This baking time is for a large rectangular casserole dish. If you use a smaller, deep dish the baking time may take closer to an hour.
Optional make ahead instructions: If you make this ahead of time follow the same instructions, but the baking time will be 5 to 10 minutes longer.
